Whipped cream is also called Chantilly cream or crème Chantilly. Whipped cream is a culinary colloid produced when heavy cream is subjected to mechanical aeration. The air inserted into the cream contains at least 35% fat in one of two processes: mechanical agitation with a high-speed blade or whip, or inject gas under high pressure, which extends rapidly when released from pressurized containment. During whipping, some fat molecules unite to form a stable network that traps air bubbles. The resulting colloid is approximately twice the volume of the original cream. However, if the whipping is continued, the fat droplets will stick together destroying the colloid butter and forming. Low-fat (or milk) cream does not whip well, while higher fat creams produce more stable foams.
