India's combination of enormous scale, inexpensive hardware and variable network quality pushed major developers to build genuinely different versions of their apps rather than merely smaller ones. Those builds are among the best-engineered software on Android, and they are useful far outside the market they were designed for.

Payments and the UPI system
India's instant payment system is used at a scale that makes it a genuine part of the platform rather than a feature of one app. Several apps front the same underlying rails, so the choice is about interface rather than capability.
The apps that front it are largely interchangeable, because they all speak to the same rails. Google's Indian build is a substantially different product from the version sold elsewhere, and the domestic wallets have the wider merchant acceptance. None of them is worth sideloading, since all are distributed normally and all check the device before they will run.
